Make your own healthy peanut butter fudhge!

I had a difficult day today. For some reason my pregnant brain had a hard time digesting the tragedy of the school shooting in Connecticut and it seemed to touch me deeply down to my soul. While I was going to post this recipe closer to Christmas in a bid to show you even healthy girls eat chocolate, today seemed like a comfort food kind of day. My comfort food is often chocolate so I made up a batch of raw peanut butter fudge to feed my desire for something sweet in the midst of such distasteful news.
One thing most of my clients tend to stress about is how to handle the craving for something sweet when there are tempting treats all around them tied up in ribbons beckoning them like sugarplums dancing in their heads. Many people believe healthy eating must mean mundane, tasteless cardboard rather than foods bursting with flavor, even sweet flavor. I beg to differ and with this fudge recipe I could rival just about any traditional recipe AND I can make it in less than 10 minutes!
This fudge and my White Chocolate Peppermint Truffles are my two most requested desserts for the holidays from everyone and the great part is they request them without knowing they are healthy. When they find out they are raw and good for you, I snag them as clients. It’s part of my evil plan to make everyone healthy one delicious bite of raw peanut butter fudge or truffle at a time.
I didn’t list maca root powder among the ingredients because many people will not have it on hand but, if you do happen to have it in your kitchen or want to order it from somewhere like Sunburst Superfoods (that has the freshest, best tasting maca root on the planet!) it’s a great malt-tasting addition that is an adaptogen to help relieve stress and balance the entire body. (It also helps increase libido for both men and women!)

Cacao
It is one of the richest sources of antioxidants, iron, magnesium and chromium of any food in the world. Cacao improves blood circulation, reduce blood clotting and lower cholesterol. It raises levels of serotonin (the “feel good hormone” ) in the brain and stimulate endorphins; thus it is a great anti-depressant and mood elevator. Cultivated for thousands of years by Aztecs was once prized as a currency as it was so highly valued ancient superfood.
Maca
Maca fruit is and adaptogenic root rich in nutrients and is full of phytonutrients, fatty acids, vitamins and minerals trace. It boosts our energy, improves fertility in both men and women and has amazing health benefits. It is also known to lower blood pressure and strengthens immunity.
Raw Chocolate Peanut Butter FudgePrint recipe
Serves: 8-10
Prep time: 10 minutes

Ingredients
1/2 cup virgin coconut oil
1/2 cup raw cacao powder (can use regular cocoa powder)
1/2 cup natural peanut butter (Make your own in a high speed blender!)
1/4 cup raw honey (use agave for vegan)
1 heaped teaspoon vanilla extract
Directions
Step 1
Put all ingredients into the bowl of your food processor. Process on high until smooth.
Step 2
Scrape the liquid mixture into a prepared pan (or muffin liners) and refrigerate for at least 30 minutes or until fudge has firmed up.
Step 3
Store in your refrigerator if your house is warm.
Note
I have made this equally as delicious with almond butter, cashew butter, walnut butter and even once, in a pinch, pecan butter. You can add in chopped chocolate, raw cacao nibs, dried fruit, or chopped nuts to make it even more interesting.
